What wheat grade do Turkish flour mills buy?
Most Turkish flour mills buy Russian milling wheat at 12.5% protein (Grade 3, GOST 9353-2016) and blend it with softer local wheat for bread flour. Lower-protein 11.5% wheat is used for biscuits and flatbreads; 13–14% for premium hearth breads.
